After Duret was diagnosed with celiac disease in 2012, Alisha established a gluten-free catering and cooking class company with hopes that she could help those with celiac disease discover a way to prepare and eat gluten-free meals without sacrificing taste and flavour.
All meals and dishes crafted inside La Oliva: Gluten-Free Kitchen are made in a 100% gluten-free environment.
Located inside the main floor of the Blue Skys Art Loft, the Mercury Room is a 150-seat creative arts, restaurant and event space made in mind for music fans, foodies and art aficionados.
Trevor Belsher and red-seal chef Rylan Krause, have turned what was once an empty ancillary space into Edmonton’s latest event venue and restaurant.

Rogue Wave Coffee
There’s a new kid on the block and their name is Rogue Wave Coffee Co. Established in 2014, Rogue Wave Coffee Co. is nestled on the main level of Blue Skys Art Loft.
The coffee shop is ran by two individuals, confusingly both named David, have made their ideas come to life after nearly ten years of dreaming of opening up their own roastery. Officially opening their doors in the summer of 2015, the space is still under some minor construction as the duo of David’s finish to install reclaimed wood countertops, outdoor benches, and a communal table which they hope to place in the middle of the space. Currently situated in the shop is a small roaster which in the future they hope to have removed and in its place, having their larger roaster added into the mix.
Moving forward, the David’s hope to create a full menu with Rogue Wave Coffee Co. suppling bites and other delights from local restaurants and supply chains.
The thought of creating an all-vegan food truck came from the minds of Mike Brennan and Garrett Kruger. Now, the home of Edmonton’s only vegan food truck, Sailin’ On resides inside Blue Sky Arts Loft’s commercial kitchen.
During the first year of food truck service, Sailin’ On received high acclamation from Edmontonians including The Tomato’s list of “Top 100 Things to Eat in Edmonton” and was a runner-up in Avenue magazine’s “Best Food Truck” category.
While you cannot make a reservation and have a sit down meal inside Sailin’ On’s kitchen at Blue Sky Arts Loft, you can find the ever popular food truck at various locations around Edmonton including downtown spots during lunch hour, Thursday evenings down at the 124 Street Grand Market and throughout the many festivals going on in Edmonton during the summer months.
Popular dishes off the vegan menu include beer battered “fish” tacos, the Irish and curry chips as well as the BLT wrap made with the house-made vegan coconut bac’n.
